On Sunday I made this bake from Melinda Messenger's cookbook (which is really good, there are lots of recipes I am going to try in there), and we loved it! I served it at the table with buttered toast, and let everyone pick out what they wanted - I always find doing this encourages the boys to try new things and they enjoy choosing what they have. I did things a little differently than the recipe in the book but it was still yum. Read on for the recipe:
Ingredients (serves 4)
600g new potatoes
Olive oil
Cheddar cheese
8 sausages (I used a mixture of pork and special honey + mustard ones to keep everyone happy!)
Mushrooms (I used baby button mushroom)
Cherry tomatoes
Salt + pepper
Method
-Preheat the oven to 200c. Cook the potatoes for about 10 minutes, then drain and tip into a roasting tray
-Drizzle olive oil over the potatoes and bake in the oven for about 45 minutes, then remove from the oven. When cool, cut a little cross in the top of each potato and fill with some cheese
-Meanwhile, arrange the sausages in a large roasting tray and cook in the oven. After 20 minutes, turn the sausages and add the mushrooms and tomatoes. Drizzle with olive oil and sprinkle with salt and pepper
-Return to the oven for a further 20 minutes, adding the pre-roasted potatoes for the final 10 minutes.
oh yum! I hardly ever cook with potatoes but this looks interesting.
