CHOCOLATE + RASPBERRY COOKIES
We made these a couple of weeks ago, just to try something different - usually when me and the kids are in the kitchen we make cupcakes. These were crunchy and delicious. (From What's for dinner?)
Ingredients:
100g dark chocolate
200g softened butter
100g caster sugar
1 tsp vanilla extract
250g plain flour
1 tsp baking powder
100g raspberry jam
150g fresh raspberries (Jamie + Alfie ate all ours before I had chance to put them on the finished cookies!)
Preheat the oven to 160c, and line 2 baking trays with baking paper / grease them. Melt the chocolate and set aside, then mix together the butter and sugar until fluffy (I just used the Kitchenaid for this). Add the vanilla, then mix the flour and baking powder together before folding into the mixture.
Next, add the melted chocolate and fold in just a few times so it looks marbled. Roll the mixture into balls, placing on the baking tray as you go. Put a thumb print in each one - this is really fun for the kids to do - then fill in with a little bit of jam. Bake in the oven for about 20 minutes. If you are adding raspberries, pop one on top of each cookie as soon as they're out of the oven.
