Whilst we were on holiday last year, we ate lots and lots of delicious food and tried dishes we hadn't tried before, but my favourite was the lamb-stuffed aubergines. They tasted so good yet looked like they'd be fairly simple to recreate, so I finally got round to finding a recipe for the dish - and here it is. Can't wait to try it!
