

The other evening I couldn't decide what to have with my jacket potato then I remembered a recipe I'd seen using cannellini beans and a few other ingredients. This made a really yummy, hearty little dish which I loved and will definitely make again.
To make this, heat a tbsp of olive oil in a pan, then fry a clove of garlic (being careful not to let it burn!), then add the cannellini beans and heat through for 3-4 minutes. I then took the pan off the heat, added some spinach, and stirred through.
Once the beans have cooled a little, add some more olive oil, the juice of half a lemon, and some capers (which I love!)
Looks good! Sometimes the simplest things are the best.
