FISH PIE BAKE



I love making this for dinner as I can prepare it quite early on then leave it in the fridge until I cook it, but it really doesn't take that long to make anyway.  You can use whatever fish you and your family like, and we've also added tomatoes and other vegetables to it too - whatever takes your fancy.

Ingredients

600g smoked haddock (or whichever fish you're using)
100ml single cream
100g half fat creme fraiche
50g parmesan
50g gruyere cheese
Ground pepper

To make, cut the fish into small pieces and spread over an ovenproof dish.  Grind over some pepper, then pour over the cream and creme fraiche.  Scatter the grated cheeses on top, then bake in an 180c oven for around 30-35 minutes.

We usually serve ours with baked potato chips and it's really good with mashed potato too.  Enjoy!

    Intriguing! I wouldn't think of doing it without mashed potato / pastry on top but this looks like lovely lighter version for summer!
