PASTA E FAGIOLI
I made this meal earlier this week as it was cold, and I wanted something comforting and filling. I love these types of meals that are simple to make and don't require any fancy ingredients - we had everything in already (except for Parmesan cheese to grate and serve on top: so I just used Cheddar which is always in the fridge). From What's for dinner?
Ingredients:
1 red onion, finely chopped
80g chorizo
1 large potato, cubed
2 garlic cloves, peeled and crushed
500ml chicken stock
400g tin chopped tomatoes
100g small dried pasta
400g tin beans (any will work well)
Cheese to serve
First, cook the onion and chorizo in a large saucepan for 5 minutes. Add the potato and garlic, and fry for another 5 minutes. Pour in the stock, tomatoes, pasta and beans, stir, then pop a lid on to simmer for around 15-20 mins until the potato is soft and the pasta cooked through.
Serve with grated cheese (and I think a nice big chunk of crusty bread would be delicious with this too)

I would never think of putting pasta and potato together! Is it not too heavy?
ReplyDeleteYes, I thought that, but no it wasn't. I cut the potato into quite small cubes too so that probably helped :)
